This is actually the first task after the harvest, and one of the most important, as the strength and fertility of the vines depend on it.
It consists of cutting the vine to guide its growth. Length, choice and disposition of the buds will determine the shape of the framework that will then condition the foliage. Pruning also allows to regulate production so the vines dont exhaust. Four types of pruning, adapted to the different grape varieties and crus, are authorised in Champagne.
