Pruning - From November to the end of March

This is one of the first and most crucial steps after the harvest. Pruning the vine plays a determining role in its future vigor and fertility.

This process involves pruning the vine to guide its upcoming growth. The length of the shoots, the choice and distribution of buds will define the vine's structure and influence the development of the foliage. Pruning also helps regulate production to prevent the vine from becoming exhausted. In Champagne, four types of pruning are allowed, each suited to specific grape varieties and crus:

Cordon de Royat - short pruning on a single long framework.

Vallée de la Marne - long pruning on a short framework (only for Meunier).

Chablis - short pruning on a long framework.

Guyot - long pruning on a short framework, which can be simple, double, or asymmetric.
